My first “NOBU” experience.

The eponymous Nobu was the first european venture for the celebrated japanese chef Nobuyuki Matsuhisa. Opened in conjunction with actor Robert De Niro, the restaurant occupies the first floor of the Metropolitan On London’s Park Lane.
Nobuyuki Matsuhisa, better know as Nobu is probably the most famous chef in America.
Though his style is firmly based in traditional japanese cuisine, he has incorporated into his cooking the diverse culinary influences acquired over a lifetime of travel especially in South America.
I had the great occasion to join some friends at the brand new (opened july 2005) Nobu Berkley.
Well, I had a really great evening and not just good fun also really lovely fish.
- Yellowtail Sashimi with Jalapeno.
Extremely tasty dish, presented as few slices of fresh yellowtail sashimi that ahve been dabbed with garlic and topped with thin jalapeno slices. The chef here suggest to eat it with a coriander leaf to tone down the jalapeno. The dish has been dressed with a yuzu soy sauce. Here you can apprerciate the elegance of the yellowtail flavour in contrast with the spiciness of the jalapeno.....superb!!
- Black Cod den Miso.
Alaskan black cod has been marinated in den miso for three days, par cooked and then oven baked. It is caramelized, so it gets literally “black” under the salamander with yuzo miso to finish. Is actually one of the chef’s signature dishes that made customers curious about.....absolutely heaven!!

Really few foods go bad faster than fish. And until recently, few people in the world had the chance to eat fresh fish

  1. Yay, Nobu! Though I’ve had a pretty over-the-top lunch at Nobu in New York, your Nobu Berkeley description brings back fond memories of eating at Matsuhisa in Los Angeles. A weird and problematic city, it also has an awful lot of good food, and Mr. N.M.’s long-ago-started Matsuhisa is both weird and awfully good. I, too, had the hamachi & jalapeno, as well as the black cod--two of the great pieces of fish I’ve ever eaten. Thanks for the memories! (This from Dublin, where I’m off to have a little sake and tofu age dashi tonight...!)
