Small-scale rawmilk soft cheese makers and regulations

For export reasons for industrial cheese makers, the regulation for making an rawmilk softcheese are very strong and makes it impossible to start with this kind of cheese

In the Netherlands ther are only a few diary producers who makes a softcheese .Only the few who allready produced rawmilk soft cheeses in 1997 (when the new sagety regulation starts) are allowed to makes it now. Every-one who want to start with these special cheeses must during an period of 5 years brings eath time the cheese to an laboratorium to surge for bacteries.There is no egual regulation for every-one. The authorities says that the rules are specific for every farm,so it depants of the man who comes to the producer if he is allowed to make rawmilk softcheese and on which conditions.Because it is not clear what the rules about softcheese making are it makes the producers vaireble ,and unsurtain about there farm.
We like to know if there are people who can advice how to deal with this.

  1. hallo hanneke, we know about these problems also here in Austria; but since therte is a EU- wide regulation on food hygiene since 2006 the regulations are much more liberal and flexible, and the national regulations have to adapt to these new regulations, you should get informations about it (you can also ask me for furthger informations) regards, Gunther

Hello, we have the same problems in Spain, because the authorities can to apply the regulations like they want, and at time they think that te small productios are less safe than the big industries. We know is don’t right, but I think that is very important to persuade them.Yet, if you know the E.A.T. (European Alliance for artisan and traditonal raw milk products), I think that is very interesting that you talk with them. I think the Netherland’s delegate is Rudy Van Schie, but I am not sure.
